The "I-just-cant-stop-eating this" Lima Bean Salad Recipe

This salad is so so so simple to do yet so fulfilling and nutritious, I had to share the recipe. But can you really call it a recipe if it takes less than 5 minutes to make and it's more of an "assembling" sequence? You tell me!

Ingredients for 2 generous servings

  • a can of lima beans (any white bean will do, do be honest), rinsed
  • an heirloom tomato or 2 roma tomatoes or 10 cherry tomatoes, diced
  • a red onion, diced
  • parsley or cilantro, chopped
  • olive oil
  • red wine vinegar
  • salt, pepper
  • chili flakes, optional

I start with the simple vinaigrette at the bottom of the bowl with olive oil, vinegar and salt. I then add the onion and the tomatoes, mix it and let it marinate a bit so they soak the vinaigrette flavour. To finish up, I add the herb, freshly ground pepper and a bit of chili flakes for a kick, which is totally optional. Mix everything and prepare to enjoy on its own or with a fresh baked fish.

Here served with seafood for a summer lunch with friends
