Look, let me be very honest: I don't love cooking. I don't like all the slicing, the dicing, the waiting, the cleaning. That is more on Bruno's side, he loves and relishes in all of it. No wonder 90% of our meals are made by him. But I do some things to. I do what I called "food assembling": I like to grab already prepped and chopped items and just give them a twist and I call that cooking. You can roll your eyes but I have survived 30+ years like that, okay?
Ingredients for 6 servings/bowls
🥗 2oo grams of pulled/shredded of roasted chicken breasts or thighs
🥗 half raw cabbage, sliced
🥗 3 large carrots
🥗 optional: one french leak or a large turnip, thinly sliced
🥗 a hanfdul of chopped fresh cilantro (coriander) - please don't use the dry version
🥗 a tablespoon of sesame seeds
🥗 olive oil & vinegar (I prefer red wine here, but have also used balsamic)
🥗 salt and pepper
This recipe can absolutely be done with a bag of coleslaw. Don't worry if you have other veggies such as red cabbage in there. Bring it in!
You add all the ingredients in a large bowl. Mix everything. See, if you get past the chopping and slicing, it's fast and easy!
Everything mixed? then Bob's your uncle! It's done, yes!
This recipe is great for 6 large bowls or to add up to 12 smaller portions into a wrap with a greek yoghurt or a tahini spread. Do give it a try and tell me what you thought of it!
