Plants | Orchid flower spike or root?

We have 5 orchids and have had them for over 4 years. It was a rough beginning with orchids in general but we became really focused on getting better at taking care of plants (thank you Youtube and Pinterest). We now know when to repot, when to wait for the leaves to grow or change, when the roots will grow like madness, when to stick your finger in the pot to understand how much water your plant needs and how to boost spike growth.
