Food | The "I-just-cant-stop-eating this" Lima Bean Salad
This salad is so so so simple to do yet so fulfilling and nutritious, I had to share the recipe. But can you really call it a recipe if it takes less than 5 minutes to make and it's more of an "assembling" sequence? You tell me!
Ingredients (for 2 generous servings)
- a can of lima beans (any white bean will do, do be honest), rinsed
- an heirloom tomato or 2 roma tomatoes or 10 cherry tomatoes, diced
- a red onion, diced
- parsley or cilantro, chopped
- olive oil
- red wine vinegar
- salt, pepper
- chili flakes, optional
I start with the simple vinaigrette at the bottom of the bowl with olive oil, vinegar and salt. I then add the onion and the tomatoes, mix it and let it marinate a bit so they soak the vinaigrette flavour. To finish up, I add the herb, freshly ground pepper and a bit of chili flakes for a kick, which is totally optional. Mix everything and prepare to enjoy on its own or with a fresh baked fish.
